Instructions

  1. Prepare the Sole Mio penne for 10 – 11 min. in a slightly salted water.
  2. Drain the water and add butter or 1-2 tbsp. of butter (optional).
  3. For the sauce: heat the butter in a shallow pan at a high temperature and fry the mushrooms for about 5 min, while scrambling them constantly (If the mushrooms are dry, you would have to place them in hot water for about 30min).
  4. Add a pinch of salt and pepper, then add the cream and let it boil for about 1 min at a low temperature.
  5. Leave the sauce aside to cool off, and If you want you could grate some parmesan cheese on top for a thicker sauce.
  6. Pour the Alfredo sauce over the Sole Mio penne and serve.
