Rusks are light and temptingly crunchy – what more inspiring choice for a summer snack. Here are a few quick and tasty ideas for morning gourmets to make a flying start of your day!

  1. Baked rusk-sandwiches with cheese

Here the trick is to briefly dip the rusks into warm water to soften. Then pour melted butter over them and grate some cheese on top. Sprinkle with salt and pepper. Bake in the oven and voila!

  1. Healthy honey rusks

If you wanna something sweet but healthy in the morning, make yourself aristocratic rusks, smeared with delicious butter and honey. They will make you feel full, but without the unnecessary guilt that you started the day with sweets.

  1. Hemingway’s breakfast

Yes, the great writers loved rusks, too! The author of “Moveable Feast” and “The Old Man and the Sea” adored an early breakfast with crunchy rusks, boiled egg and cheese. Another idea is to put tomato slices onto the rusks and sprinkle a little basil and a few drops of olive oil on them. Again, both healthy and very appetizing!

  1. Avocado crunches

Smash well ripe avocado and mix it with some olive paste. Spread the mixture over the rusks and add some aromatic, fresh rucola leaves. You may also sprinkle some salt, but be careful not to over-salt it – the olives are salty enough.

  1. Sop for the kids

Rusks are also ideal for a sop that the kids love. With milk, water, or aromatic tea like lime – you choose. Add a little crushed cheese, butter and avoid adding sugar.

  1. Sailor’s rusks

Mix in a cup some thick yoghurt and tuna fish from a can. Add a little pepper and a few drops of olive oil to the mixture. Stir vigorously. Spread а thick layer on the rusks. This breakfast is very nutritious, delicious and giving you the opportunity to eat healthy fish. If desired, add fresh cucumber sticks to this awesome breakfast.

  1. Fruit fairytale
