- Blend the peeled avocado together with the cucumber, garlic, basil, lemon juice, salt and black pepper.
- Slice the zucchini thin ( like spaghetti) without peeling them and halve the cherry tomatoes.
- Cook the pasta in salted water. Drain and add the puree. Add the zucchini and mix well.
- Garnish with cherry tomatoes and arugula and serve.
