1. Boil the spaghetti in a slightly salted water for 7-8 minutes, drain them and keep 1 cup of their water.
  2. In the meantime in a large pan heat the olive oil over medium high heat and fry the garlic for 30 seconds.
  3. Place the rest of the vegetables inside, season with salt and pepper and keep them in until they receive a nice crispy crust.
  4. Add the pasta, water, lemon juice and parmesan and stir well.
